Meat-based main courses
- Chicken Piccata (from Accidental Hedonist)
- I've had this recipe for years now, and I've made it so many times that I no longer have to look at the recipe or even measure out quantities when I make it! A good dish to make for company, as it tastes delicious and looks relatively fancy. If you like lemon and chicken, you'll like this recipe. We often serve it with mashed potatoes because you can use up the extra sauce on them.
Vegetable side dishes
- Ratatouille (recipe from Guillaume Brahimi, presented on French Food Safari)
- This ratatouille is the best I've ever had in all my years living in France!! Unlike most ratatouille, the vegetables are cooked separately and don't get mushy.
Muffins
- Healthy Carrot Cake Muffins (from Generation Y Foodie)
- If you like carrot cake muffins but are trying to eat a bit more healthily, then these are the carrot cake muffins for you! Quite a bit of the fat is replaced with healthier replacements like applesauce, and half of the flour is whole flour instead of white. I added a chopped red apple to the mix to give it a bit more fiber and moisture.
